Title: Braised Leeks & Green Beans

Yield: 8 Servings

1/2cSherry
1tsOlive oil
5cLeeks, well washed
1cWild mushrooms, sliced
2cGreen beans, cut into - 1/3" lengths
1tsOrange juice
1/2tsOrange peel, grated
1tbCider vinegar
  Salt & pepper

In a large skillet, heat sherry & oil over medium high heat. Add leeks & cook, stirring frequently, for 3 minutes. Add mushrooms & beans. Saute until the mushrooms begin to exude moisture, about 5 minutes. Stir in the remaining ingredients & remove from heat. Serve warm.
